Today has been a rather grey and ominous day. Precipitation occurred in other territories but didn’t in mine. There was no rain in sight. Who would have thought such gloomy look would be a thing in South Florida? But, from time to time especially during the winter months that occurs. From dawn until dusk there wasn’t sight of the golden and brilliant rays of the sun.
Needed to perk my mood and spirit up a bit so I made a dash to my range and whipped up some leftovers I had on hand. This comprised of a piece of jerk chicken breast and some barley. Decided to trod the healthy route. After all, it’s January when we’re all watching our food choices, right?
Anyway, blanched me a few spears of asparagus accompanied with broccoli. Did a quick saute of my veggies in a drizzle of olive oil as I seasoned along. Then, I tossed in diced chicken breast and folded in. I wasn’t finished just yet. I took my dish over the moon by adding a few grape tomatoes which gave somewhat of a colorful hue to my dish.
I know; I know, I should have photos depicting all of this. But sometimes, we’ve to just exercise our imagination. Next time I promise I’ll have all of this from step to step. But you get my drift, right? Served up this simple yet delectable dish on hot bed of left-over barley.
As I sat and savored my finished dish I couldn’t help but to take a glimpse at the grey and ominous skies on the outskirts, I knew for sure that me and my palate were in a beautiful place. Those juicy grape tomatoes were the highlight of my dish. As I popped one in my mouth, it exploded and deposited all its warm, tart and somewhat sweet juices on the roof of my mouth. It took me by surprise in an awesome way. And that’s what beautiful and simple things are made of.
And, that’s how my day transformed from grey to bright with just the simple things. I hope that this day finds you in a good place.
